Easter is a hop, skip and jump away so it’s time to get cooking! I’ll be taste testing all the Hot Cross Buns London has to offer (OK some) and letting you know which ones you simply must try. In fact, I’m such a Hot Cross Bun fanatic that I’ll be attending an Easter cooking class by London bakery Bread Ahead to perfect my bun making skills.
The only association I can make between the recipe I’ll be sharing today with Easter is that pesto is green and rabbits eat grass… which is green…Yup, that’s all I’ve got. But this pesto pasta recipe is something you’ll want to whip up right away. It’s so simple and quick to make but is packed full of flavour. I have to thank my friends back home for sharing their pesto perfection secret of banishing pine nuts for almonds. Major game changer.
- A massive bunch of basil
- A small handful of spinach
- A handful of almonds
- ¼ cup olive oil. More if needed
- Juice of 1 lemon
- ¼ of parmesan or nutritional yeast
- Salt and pepper
- Blend the nuts first into a fine meal before adding all the other ingredients. Slowly pour in the olive oil as you blend.
Serve with your pasta of choice! I recommend adding olives, a bit of rocket and chicken.
