Dairy free nachos can be a tricky taste so when I found a vegan recipe that was actually good I was overjoyed!
I used the Minimalist Baker’s recipe and added some amazing sea salt corn chips as my base. It turned out just as well as my mum’s nachos and probably a bit healthier too.
My main tip for the recipe is to add at least an extra few tbsps of nutritional yeast to the the cashew-less vegan queso sauce as I found that it did not have much of a cheese taste with only the 2tbsp that were suggested.
I have also tried this recipe with protein tortilla chips (substituting the whey protein for egg protein) and they are super tasty too. This obviously means the recipe won’t be vegan anymore but if you don’t have an issue with that I highly suggest this as an option.
